Spiced Pumpkin Pudding Dessert Recipe

Last night, before Dad got home, I played around on Pinterest. Coffee Cake recipes were the pins that showed up in my feed. Mm..yum... My mouth drooled. Then I saw one: Pumpkin Spice Coffee Cake. Oh! Did that sound delish! I searched for a recipe containing the ingredients I had on hand... While all the recipes  looked good -by the picture- I couldn't find one that I had the ingredients for, or one that sounded good. So, finally, I thought, why not make my own recipe... So that's what I did... I made and twisted my recipe into perfection. :D The reason, I say that, is because, my Dad ate THREE large pieces snd all my family raved about it! I was so pleased it had turned out and pleased my own dear family. ;)


Baked with a Crumb Topping and Topped with Walnuts. 


The Recipe: Spiced Pumpkin Pudding Dessert

Cake

  • 2 1/4 cups all purpose flour
  • 1 1/ 4 cups packed brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 2/3 cup softened butter
  • 1 1/3 cups milk
  • 1 tsp. real vanilla
  • 2 eggs
  • 1, 15oz can of  pumpkin
  • 1/4 cup Chopped walnuts or pecans. (Optional)



Topping 

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 tsp. cinnamon
  • 5 tbsp. butter, softened
Directions

Cake: Preheat oven to 350*F. Mix together dry ingredients. Cut in butter, until it resembles course meal. In a separate bowl combine milk, pumpkin, eggs, and vanilla. Add liquid mixture to dry mixture. Mix until dry ingredients are wet.  Spread in greased 9x13 pan.

Topping:  Mix Dry ingredients. Cut in softened butter. Should be crumbly. If needed you can adjust the amounts of butter and flour sugar mixture to make it desired crumblyness. :P  Sprinkle Crumb Topping on the cake. Sprinkle chopped walnuts. Bake for 40 minutes. Serve Warm. Refrigerate leftovers. Enjoy it with a nice hot cup of coffee!

Scriptures that have stuck out to me...


The past month my family has started family worship. We started with Proverbs and have just finished it. Daddy said that the next books that we read will be picked like this: Mom picks the next book, me the next one, and so on down the line....We will be starting Colossians next..(mom's pick) I can't decide if I will pick James or Hebrews.... On the other note, I have started my personal study. I am reading Isaiah and Matthew. I am comparing Matthews account of Jesus to Luke's. It is interesting to note the slight difference in each account of Jesus. Anyway... These are the passages that the stuck out to me. And.. since I had them on my camera phone... I thought I would share them. :)



Thoughts: Just as Christ told the man: "Rise up and walk", so should we rise up and walk.. Walk in His way.. Not ours..

We'll be Leaving Soon...

....but for now we are jumping in them. :) Mom had gone to town and the rest of us.. well, me and the 4 youngest chillin's were at home. We cleaned in the morning, and found some activities later. One of the activities, were to jump in the leaves... The Children's faces were very sweet. :)

Twin Pines Conservation Area

Last Saturday, Christian had to finish taking his test for his Hunter Safety Education. The closest class that wasn't full, was in Winona. About an hour drive from our house and in the middle of nowhere... Christian's class lasted four hours. So we had plenty of time to kill. :) We started by walking on the trails.


And we walked, and we walked, and we walked. For an hour and half. :D
We went through Narnia, and I think we may have seen TreeBeard. 

I think Li'ora would have walked most of the time, except that her little legs couldn't keep up and she was having trouble with the rocks.. :D 

We made sure to read the "signs" they had on the trail.

And we started our way back...

Before, we began walking, we looked at the old machinery they had there. The boys were fascinated with the old truck.

We took a Sunday Drive

As some of you may know already, we are looking for a house to buy. Preferably one that has a nice house and some acreage with  it... There hard to find.. That is, there hard to find for a family of nine.. :| Last Saturday, a friend called Dad to ask him a few things. As they talked, they began to talk about houses. This friend told us that he thought there was one down E Highway on 21 N... Well... "we went all over those hills, and we did not here any singin'.." (quote from Emperors New Groove) No, we didn't find the house...  but we did find this place:

I couldn't capture the beauty properly.

We stayed for quite awhile. Trapped in it's beauty. :)
Most of us are finding rocks for Dad here. :)

Mom and Li'ora. (and  baby coming in June.. :)

Dad is the excellent rock skipper in our family. Most times everyone finds skipping rocks for him and let's him do the skipping. :) Dad found this one.. It look like miniature cave.  

Dad skipping rocks. This was a wonderful skip, but not one his better ones. He can sometimes get the rocks to skip 15 times. :) One of my favorite memories. :)

Jericho's 4th Deer


Jericho's excitement mounted as he marched into the forest. The air crisp and his breath visible. It was his first time to go hunting. He was hopeful. He sat down in the chosen spot. Dad sitting down beside him. He shot his first deer in his first hunting year. The next hunting season, he shot 2. This year, his third year. He used open sites. All of us seemed to doubt that he would get one. But.. he proved us wrong. We have a natural hunter on our hands! A very might hunter. :D
